Ingredients

  • Cucumber - 100 grams
  • Red bell pepper - 50 grams
  • Red onion - 30 grams
  • Garlic - 1 clove
  • Extra virgin olive oil - 2 tablespoons
  • Red wine vinegar - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Water - 200 milliliters

Steps

  1. Wash all vegetables thoroughly.
  2. Peel the cucumber and chop it into small pieces.
  3. Core and chop the red bell pepper into small pieces.
  4. Peel and chop the red onion.
  5. In a blender, combine the ripe tomatoes, cucumber, red bell pepper, red onion, and garlic.
  6. Add extra virgin olive oil, red wine vinegar, and water to the blender.
  7. Blend the mixture until smooth, adjusting the consistency with more water if necessary.
  8. Season with salt and black pepper to taste, and blend again briefly to combine.
  9. Chill the gazpacho in the refrigerator for at least 30 minutes before serving.
  10. Serve cold, garnished with diced vegetables or a drizzle of olive oil if desired.
