  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Fresh parsley - 10 grams (for garnish)

Steps

  1. Wash and cut the zucchini, red bell pepper, carrot, and onion into thin strips.
  2. In a bowl, combine the chickpea flour, water, salt, black pepper, and paprika to create a smooth batter.
  3. Heat the olive oil in a deep frying pan over medium heat until hot.
  4. Dip each vegetable strip into the batter, allowing excess to drip off.
  5. Carefully place the battered vegetables into the hot oil, frying in batches to avoid overcrowding.
  6. Fry until golden brown and crispy, about 3-4 minutes per batch, turning occasionally for even cooking.
  7. Remove the fried vegetables with a slotted spoon and place them on paper towels to drain excess oil.
  8. Garnish with freshly chopped parsley and serve immediately.
