  • Cold sparkling water - 150ml
  • Garlic powder - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - for frying
  • Lemon wedges - for serving

Steps

  1. Wash and slice the zucchinis into 0.5 cm thick rounds.
  2. In a mixing bowl, combine the all-purpose flour, cornstarch, garlic powder, salt, and black pepper.
  3. Gradually whisk in the cold sparkling water until the batter is smooth and free of lumps.
  4. Heat olive oil in a deep frying pan over medium-high heat (about 180°C or 350°F).
  5. Dip each zucchini slice into the batter, allowing excess to drip off.
  6. Carefully place the battered zucchini slices in the hot oil, cooking in batches to avoid overcrowding.
  7. Fry for about 3-4 minutes or until golden brown, turning occasionally for even cooking.
  8. Remove the fried zucchini with a slotted spoon and place them on a paper towel-lined plate to drain excess oil.
  9. Serve hot with lemon wedges on the side.
