- Garlic powder - 1 teaspoon

- Black pepper - 1/2 teaspoon

- Lemon wedges - for serving
Steps
- Wash and slice the zucchinis into 0.5 cm thick rounds.
- In a mixing bowl, combine the all-purpose flour, cornstarch, garlic powder, salt, and black pepper.
- Gradually whisk in the cold sparkling water until the batter is smooth and free of lumps.
- Heat olive oil in a deep frying pan over medium-high heat (about 180°C or 350°F).
- Dip each zucchini slice into the batter, allowing excess to drip off.
- Carefully place the battered zucchini slices in the hot oil, cooking in batches to avoid overcrowding.
- Fry for about 3-4 minutes or until golden brown, turning occasionally for even cooking.
- Remove the fried zucchini with a slotted spoon and place them on a paper towel-lined plate to drain excess oil.
- Serve hot with lemon wedges on the side.
