Ingredients

  • Artichoke hearts - 2 large (fresh or 1 can, drained)

  • Cornstarch - 50 grams
  • Garlic powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Sparkling water - 150 ml (chilled)
  • Olive oil - for frying
  • Lemon wedges - for serving

Steps

  1. If using fresh artichokes, trim the stems and remove the outer leaves, then slice the artichokes in half and remove the fuzzy choke.
  2. In a mixing bowl, combine the all-purpose flour, cornstarch, garlic powder, paprika, salt, and black pepper.
  3. Gradually add the chilled sparkling water to the dry ingredients, whisking until you achieve a smooth batter.
  4. Heat the olive oil in a deep pan or fryer over medium-high heat until it reaches 180°C (350°F).
  5. Dip each artichoke half into the batter, ensuring it is fully coated, then carefully place it in the hot oil.
  6. Fry the artichokes in batches for about 3-4 minutes, or until they are golden brown and crispy, turning occasionally for even cooking.
  7. Using a slotted spoon, remove the fried artichokes and drain them on paper towels to remove excess oil.
  8. Serve the fried artichokes hot with lemon wedges on the side for squeezing over the top.
