- Sparkling water - 150 ml (chilled)
- Olive oil - for frying

Steps
- If using fresh artichokes, trim the stems and remove the outer leaves, then slice the artichokes in half and remove the fuzzy choke.
- In a mixing bowl, combine the all-purpose flour, cornstarch, garlic powder, paprika, salt, and black pepper.
- Gradually add the chilled sparkling water to the dry ingredients, whisking until you achieve a smooth batter.
- Heat the olive oil in a deep pan or fryer over medium-high heat until it reaches 180°C (350°F).
- Dip each artichoke half into the batter, ensuring it is fully coated, then carefully place it in the hot oil.
- Fry the artichokes in batches for about 3-4 minutes, or until they are golden brown and crispy, turning occasionally for even cooking.
- Using a slotted spoon, remove the fried artichokes and drain them on paper towels to remove excess oil.
- Serve the fried artichokes hot with lemon wedges on the side for squeezing over the top.
