- Coconut milk - 200 ml
- Almond milk - 100 ml
- Agar-agar powder - 1 teaspoon
- Maple syrup - 3 tablespoons
- Vanilla extract - 1 teaspoon
- Brown sugar - 4 tablespoons
- Water - 2 tablespoons
Steps
- In a small saucepan, combine the brown sugar and water over medium heat. Stir until the sugar is dissolved and the mixture turns into a caramel, about 5-7 minutes.
- Once the caramel is ready, quickly pour it into two small ramekins, tilting them to coat the bottom evenly. Set aside to cool and harden.
- In another saucepan, combine the coconut milk, almond milk, maple syrup, vanilla extract, and agar-agar powder. Whisk together and bring to a gentle simmer over medium heat.
- Simmer the mixture for about 5 minutes, stirring constantly, until the agar-agar is fully dissolved.
- Remove from heat and let it cool for a few minutes before carefully pouring the mixture into the prepared ramekins over the hardened caramel.
- Refrigerate for at least 30 minutes to allow the flan to set.
- To serve, run a knife around the edges of the ramekins and invert onto a plate to release the flan, allowing the caramel to flow over the top.
