Ingredients

  • Coconut milk - 200 ml
  • Almond milk - 100 ml
  • Agar-agar powder - 1 teaspoon
  • Maple syrup - 3 tablespoons
  • Vanilla extract - 1 teaspoon
  • Brown sugar - 4 tablespoons
  • Water - 2 tablespoons

Steps

  1. In a small saucepan, combine the brown sugar and water over medium heat. Stir until the sugar is dissolved and the mixture turns into a caramel, about 5-7 minutes.
  2. Once the caramel is ready, quickly pour it into two small ramekins, tilting them to coat the bottom evenly. Set aside to cool and harden.
  3. In another saucepan, combine the coconut milk, almond milk, maple syrup, vanilla extract, and agar-agar powder. Whisk together and bring to a gentle simmer over medium heat.
  4. Simmer the mixture for about 5 minutes, stirring constantly, until the agar-agar is fully dissolved.
  5. Remove from heat and let it cool for a few minutes before carefully pouring the mixture into the prepared ramekins over the hardened caramel.
  6. Refrigerate for at least 30 minutes to allow the flan to set.
  7. To serve, run a knife around the edges of the ramekins and invert onto a plate to release the flan, allowing the caramel to flow over the top.
