Ingredients
- Cream cheese - 100 grams
- Heavy cream - 200 ml
- Eggs - 2 large
- Erythritol - 50 grams
- Vanilla extract - 1 teaspoon
- Salt - a pinch
- Butter - 10 grams (for greasing)
Steps
- Preheat your oven to 160°C (320°F).
- In a mixing bowl, combine the cream cheese, heavy cream, erythritol, eggs, vanilla extract, and salt. Blend until smooth and well combined.
- Grease two small ramekins with butter to prevent sticking.
- Pour the flan mixture evenly into the prepared ramekins.
- Place the ramekins in a baking dish and fill the dish with hot water until it reaches halfway up the sides of the ramekins.
- Bake in the preheated oven for about 25 minutes, or until the flan is set but still slightly jiggly in the center.
- Remove the ramekins from the water bath and let them cool to room temperature. Refrigerate for at least 2 hours before serving.
- To serve, run a knife around the edges of the flan and invert onto a plate.
