Ingredients

  • Cream cheese - 100 grams
  • Heavy cream - 200 ml
  • Unsweetened almond milk - 50 ml
  • Eggs - 2 large
  • Erythritol - 50 grams
  • Vanilla extract - 1 teaspoon
  • Salt - a pinch

Steps

  1. Preheat the oven to 160°C (320°F).
  2. In a mixing bowl, combine the cream cheese, heavy cream, almond milk, erythritol, vanilla extract, and a pinch of salt. Mix until smooth and creamy.
  3. Add the eggs one at a time, mixing well after each addition until fully incorporated.
  4. Pour the mixture into two ramekins or custard cups.
  5. Place the ramekins in a baking dish and fill the baking dish with hot water until it reaches halfway up the sides of the ramekins.
  6. Bake in the preheated oven for about 30-35 minutes, or until the flans are set but still slightly jiggly in the center.
  7. Remove the ramekins from the water bath and allow them to cool at room temperature for about 10 minutes.
  8. Chill in the refrigerator for at least 2 hours before serving.
  9. To serve, run a knife around the edges of the flan, invert onto a plate, and enjoy.
