Ingredients

  • Coconut milk - 200 ml
  • Eggs - 2 large
  • Honey - 2 tablespoons
  • Vanilla extract - 1 teaspoon
  • Cornstarch - 1 tablespoon
  • Shredded unsweetened coconut - 30 grams
  • Pinch of salt
  • Water - 1 cup (for baking)

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, whisk together the eggs, honey, vanilla extract, and salt until well combined.
  3. Add the coconut milk and cornstarch to the egg mixture, and whisk until smooth.
  4. Stir in the shredded unsweetened coconut until evenly distributed.
  5. Pour the mixture into two small ramekins.
  6. Place the ramekins in a baking dish and fill the dish with water until it reaches halfway up the sides of the ramekins.
  7. Bake in the preheated oven for 40-45 minutes, or until the flans are set and a toothpick inserted in the center comes out clean.
  8. Remove the ramekins from the water bath and let them cool to room temperature.
  9. Refrigerate for at least 2 hours before serving.
  10. To serve, run a knife around the edges of the flan and invert onto a plate.
