Ingredients
- Coconut milk - 200 ml
- Eggs - 2 large
- Honey - 2 tablespoons
- Vanilla extract - 1 teaspoon
- Cornstarch - 1 tablespoon
- Shredded unsweetened coconut - 30 grams
- Pinch of salt
- Water - 1 cup (for baking)
Steps
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, whisk together the eggs, honey, vanilla extract, and salt until well combined.
- Add the coconut milk and cornstarch to the egg mixture, and whisk until smooth.
- Stir in the shredded unsweetened coconut until evenly distributed.
- Pour the mixture into two small ramekins.
- Place the ramekins in a baking dish and fill the dish with water until it reaches halfway up the sides of the ramekins.
- Bake in the preheated oven for 40-45 minutes, or until the flans are set and a toothpick inserted in the center comes out clean.
- Remove the ramekins from the water bath and let them cool to room temperature.
- Refrigerate for at least 2 hours before serving.
- To serve, run a knife around the edges of the flan and invert onto a plate.
