Ingredients

  • Whole milk - 250 ml
  • Granulated sugar - 100 g, divided
  • Eggs - 2 large
  • Vanilla extract - 1 tsp
  • Cornstarch - 1 tbsp
  • Water - 2 tbsp

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a small saucepan over medium heat, combine 50 g of granulated sugar and water. Stir until the sugar dissolves and cook without stirring until it turns a deep amber color.
  3. Quickly pour the caramel into two ramekins, swirling to coat the bottom evenly. Set aside to let it harden.
  4. In a mixing bowl, whisk together the eggs, remaining 50 g of sugar, cornstarch, and vanilla extract until smooth.
  5. In a saucepan, heat the milk over medium heat until it is hot but not boiling. Gradually whisk the hot milk into the egg mixture until fully combined.
  6. Strain the mixture through a fine sieve into a clean bowl to remove any lumps.
  7. Pour the custard mixture evenly into the prepared ramekins over the hardened caramel.
  8. Place the ramekins in a baking dish and add hot water to the dish until it reaches halfway up the sides of the ramekins.
  9. Bake for 30-35 minutes or until the flans are set but still slightly jiggly in the center.
  10. Remove from the oven and let cool to room temperature. Refrigerate for at least 2 hours before serving.
  11. To serve, run a knife around the edges of the flans, invert onto a plate, and enjoy the caramel sauce that will flow over the top.
