- Ripe avocado - 1 medium
- Coconut milk - 200 ml
- Maple syrup - 3 tablespoons
- Agar-agar powder - 1 teaspoon
- Vanilla extract - 1 teaspoon
- Lemon juice - 1 tablespoon
- Pinch of salt
Steps
- In a blender, combine the ripe avocado, coconut milk, maple syrup, vanilla extract, lemon juice, and a pinch of salt. Blend until completely smooth.
- In a small saucepan, combine 100 ml of coconut milk with the agar-agar powder. Stir well and bring to a gentle boil over medium heat, whisking continuously until the agar-agar is fully dissolved.
- Remove the saucepan from heat and add the remaining coconut milk to the mixture, stirring well.
- Add the warm agar-agar mixture to the avocado blend and blend again until fully combined.
- Pour the mixture into two small ramekins or dessert cups and refrigerate for at least 2 hours, or until set.
- Once set, carefully unmold the flan onto a plate or serve directly in the ramekins. Enjoy chilled.
