- Pork loin - 300 grams
- Serrano ham - 100 grams
- Cheese (Manchego or similar) - 100 grams, sliced
- Almond flour - 50 grams
- Egg - 1 large
- Garlic powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - for frying
Steps
- 1. Begin by placing the pork loin between two sheets of plastic wrap and pound it until it's about 1/4 inch thick.
- 2. Lay the slices of Serrano ham evenly over each piece of pork, followed by the cheese slices.
- 3. Roll the pork tightly from one end to the other and secure with toothpicks if necessary.
- 4. In a shallow bowl, mix almond flour, garlic powder, paprika, salt, and pepper.
- 5. In another bowl, beat the egg until well combined.
- 6. Dip each rolled pork piece into the egg, then coat it thoroughly in the almond flour mixture.
- 7. Heat olive oil in a skillet over medium heat and once hot, add the flamenquines.
- 8. Fry for about 4-5 minutes on each side, or until golden brown and cooked through.
- 9. Remove from the skillet and let them rest for a couple of minutes before slicing.
