- Coconut milk - 200 ml
- Maple syrup - 50 ml
- Cornstarch - 30 grams
- Lemon juice - 2 tablespoons
- Vanilla extract - 1 teaspoon
- Fresh mint leaves - 5 grams
- Salt - a pinch
Steps
- Preheat the oven to 180°C (356°F).
- In a mixing bowl, combine almond flour, cornstarch, and a pinch of salt. Mix well.
- In a separate bowl, whisk together the coconut milk, maple syrup, lemon juice, and vanilla extract until smooth.
- Gradually add the wet ingredients to the almond flour mixture, stirring until you achieve a smooth batter.
- Finely chop the mint leaves and fold them into the batter.
- Pour the mixture into a greased 15 cm (6 inch) round cake pan and smooth the top.
- Bake in the preheated oven for 25-30 minutes, or until the top is lightly golden and the center is set.
- Remove from the oven and let it cool to room temperature before refrigerating for at least 1 hour.
- Slice and serve chilled, garnished with additional mint leaves if desired.
