  • Almond flour - 100 grams
  • Coconut oil - 30 grams, melted
  • Honey - 2 tablespoons
  • Egg - 1 large
  • Feta cheese - 100 grams, crumbled
  • Ricotta cheese - 100 grams
  • Fresh mint - 2 tablespoons, finely chopped
  • Egg - 1 large, for filling
  • Vanilla extract - 1 teaspoon
  • Salt - a pinch

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine the almond flour, melted coconut oil, honey, and 1 egg until a dough forms.
  3. Press the dough into the bottom and up the sides of a small tart pan (about 15 cm in diameter).
  4. In another bowl, mix together the crumbled feta cheese, ricotta cheese, chopped mint, 1 egg, vanilla extract, and a pinch of salt until smooth.
  5. Pour the cheese mixture into the almond crust, spreading it evenly.
  6. Bake in the preheated oven for 25-30 minutes, or until the filling is set and the crust is lightly golden.
  7. Remove from the oven and let it cool for a few minutes before slicing.
  8. Serve warm or chilled, garnished with extra mint leaves if desired.
