Ingredients

  • Almond flour - 100 grams
  • Coconut oil - 50 grams, melted
  • Honey - 30 grams
  • Eggs - 2 large
  • Ricotta cheese - 200 grams
  • Feta cheese - 50 grams, crumbled
  • Fresh mint - 2 tablespoons, chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon zest - 1 teaspoon
  • Baking powder - 1 teaspoon
  • Salt - a pinch

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine the almond flour, melted coconut oil, honey, and a pinch of salt until well blended.
  3. Press the almond flour mixture into the bottom of a greased 20 cm (8 inch) round baking dish to form the crust.
  4. In another bowl, mix the ricotta cheese, crumbled feta cheese, chopped mint, chopped parsley, lemon zest, and baking powder until smooth.
  5. Add the eggs to the cheese mixture and beat until fully incorporated.
  6. Pour the cheese filling over the crust in the baking dish, spreading evenly.
  7. Bake in the preheated oven for 25-30 minutes, or until the top is golden and set.
  8. Allow to cool slightly before slicing and serving.
