- Almond flour - 100 grams
- Coconut oil - 50 grams, melted
- Honey - 30 grams
- Eggs - 2 large
- Ricotta cheese - 200 grams
- Feta cheese - 50 grams, crumbled
- Fresh mint - 2 tablespoons, chopped
- Fresh parsley - 2 tablespoons, chopped
- Lemon zest - 1 teaspoon
- Baking powder - 1 teaspoon
- Salt - a pinch
Steps
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, combine the almond flour, melted coconut oil, honey, and a pinch of salt until well blended.
- Press the almond flour mixture into the bottom of a greased 20 cm (8 inch) round baking dish to form the crust.
- In another bowl, mix the ricotta cheese, crumbled feta cheese, chopped mint, chopped parsley, lemon zest, and baking powder until smooth.
- Add the eggs to the cheese mixture and beat until fully incorporated.
- Pour the cheese filling over the crust in the baking dish, spreading evenly.
- Bake in the preheated oven for 25-30 minutes, or until the top is golden and set.
- Allow to cool slightly before slicing and serving.
