  • Cherry tomatoes - 150 grams, halved
  • Green peas - 100 grams (fresh or frozen)
  • Vegetable broth - 600 ml
  • Saffron threads - 1 pinch
  • Smoked paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. In a large paella pan or skillet, heat the olive oil over medium heat.
  2. Add the chopped onion and garlic, sautéing until softened and fragrant, about 3-4 minutes.
  3. Stir in the diced red bell pepper and zucchini, cooking for another 5 minutes until they start to soften.
  4. Add the cherry tomatoes and green peas, cooking for an additional 3 minutes.
  5. In a small bowl, dissolve the saffron threads in a few tablespoons of warm vegetable broth.
  6. Add the fideo noodles to the pan, stirring to coat them with the vegetable mixture.
  7. Sprinkle the smoked paprika, salt, and black pepper over the noodles, mixing well.
  8. Pour in the vegetable broth and the dissolved saffron, ensuring the noodles are submerged.
  9. Increase the heat and bring the mixture to a simmer. Cook uncovered for 10-12 minutes, or until the noodles are al dente and most of the liquid is absorbed.
