- Green peas - 100 grams (fresh or frozen)
- Vegetable broth - 600 ml
- Saffron threads - 1 pinch
- Smoked paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- In a large paella pan or skillet, heat the olive oil over medium heat.
- Add the chopped onion and garlic, sautéing until softened and fragrant, about 3-4 minutes.
- Stir in the diced red bell pepper and zucchini, cooking for another 5 minutes until they start to soften.
- Add the cherry tomatoes and green peas, cooking for an additional 3 minutes.
- In a small bowl, dissolve the saffron threads in a few tablespoons of warm vegetable broth.
- Add the fideo noodles to the pan, stirring to coat them with the vegetable mixture.
- Sprinkle the smoked paprika, salt, and black pepper over the noodles, mixing well.
- Pour in the vegetable broth and the dissolved saffron, ensuring the noodles are submerged.
- Increase the heat and bring the mixture to a simmer. Cook uncovered for 10-12 minutes, or until the noodles are al dente and most of the liquid is absorbed.
- Remove from heat, cover with a clean kitchen towel, and let it sit for 5 minutes.
