- Fideuà noodles - 200 grams
- Olive oil - 3 tablespoons
- Red bell pepper - 1, diced
- Zucchini - 1, diced
- Artichoke hearts - 150 grams, quartered
- Green peas - 100 grams, fresh or frozen
- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Tomato - 1 medium, grated
- Vegetable broth - 600 ml
- Saffron strands - 1 pinch
- Smoked paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Lemon - 1, for serving
- Fresh parsley - for garnish
Steps
- In a small bowl, steep the saffron strands in a few tablespoons of warm vegetable broth and set aside.
- In a large skillet or paella pan, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened, about 3-4 minutes.
- Add the diced red bell pepper and zucchini to the skillet, and cook for another 5 minutes until slightly tender.
- Stir in the quartered artichoke hearts, green peas, and grated tomato, cooking for an additional 2-3 minutes.
- Add the fideuà noodles to the skillet, and stir well to coat them with the vegetable mixture.
- Pour in the vegetable broth along with the saffron-infused broth, smoked paprika, salt, and black pepper. Stir to combine and bring to a gentle simmer.
- Cook the fideuà for about 10-12 minutes, without stirring, until the noodles have absorbed most of the liquid and are tender.
- Once cooked, remove from heat and let it sit for a few minutes. Serve with a squeeze of fresh lemon juice and garnish with chopped parsley.
