Ingredients

  • Fideuà noodles - 200 grams
  • Olive oil - 3 tablespoons
  • Red bell pepper - 1, diced
  • Zucchini - 1, diced
  • Artichoke hearts - 150 grams, quartered
  • Green peas - 100 grams, fresh or frozen
  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Tomato - 1 medium, grated
  • Vegetable broth - 600 ml
  • Saffron strands - 1 pinch
  • Smoked paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Lemon - 1, for serving
  • Fresh parsley - for garnish

Steps

  1. In a small bowl, steep the saffron strands in a few tablespoons of warm vegetable broth and set aside.
  2. In a large skillet or paella pan, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened, about 3-4 minutes.
  3. Add the diced red bell pepper and zucchini to the skillet, and cook for another 5 minutes until slightly tender.
  4. Stir in the quartered artichoke hearts, green peas, and grated tomato, cooking for an additional 2-3 minutes.
  5. Add the fideuà noodles to the skillet, and stir well to coat them with the vegetable mixture.
  6. Pour in the vegetable broth along with the saffron-infused broth, smoked paprika, salt, and black pepper. Stir to combine and bring to a gentle simmer.
  7. Cook the fideuà for about 10-12 minutes, without stirring, until the noodles have absorbed most of the liquid and are tender.
  8. Once cooked, remove from heat and let it sit for a few minutes. Serve with a squeeze of fresh lemon juice and garnish with chopped parsley.
