Ingredients

  • Fideo noodles - 150 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Red bell pepper - 1 medium, diced
  • Green beans - 100 grams, chopped
  • Tomato - 1 medium, grated
  • Fish stock - 500 milliliters
  • Shrimp - 150 grams, peeled and deveined
  • Mussels - 100 grams, cleaned
  • Paprika - 1 teaspoon
  • Saffron - a pinch
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Heat the olive oil in a large, non-stick pan over medium heat.
  2. Add the minced garlic and sauté for 1 minute until fragrant.
  3. Stir in the diced red bell pepper and chopped green beans, cooking for 5 minutes until softened.
  4. Add the grated tomato, paprika, saffron, salt, and black pepper, stirring for another 2 minutes.
  5. Pour in the fish stock and bring to a simmer.
  6. Add the fideo noodles and cook for about 7 minutes, stirring occasionally, until the noodles start to absorb the liquid.
  7. Add the shrimp and mussels, cooking for an additional 5-7 minutes until the shrimp are pink and the mussels are open.
  8. Remove from heat and let sit for 2 minutes before garnishing with fresh parsley and serving.
