- Fideo noodles - 150 grams
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Red bell pepper - 1 medium, diced
- Green beans - 100 grams, chopped
- Tomato - 1 medium, grated
- Fish stock - 500 milliliters
- Shrimp - 150 grams, peeled and deveined
- Mussels - 100 grams, cleaned
- Paprika - 1 teaspoon
- Saffron - a pinch
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Heat the olive oil in a large, non-stick pan over medium heat.
- Add the minced garlic and sauté for 1 minute until fragrant.
- Stir in the diced red bell pepper and chopped green beans, cooking for 5 minutes until softened.
- Add the grated tomato, paprika, saffron, salt, and black pepper, stirring for another 2 minutes.
- Pour in the fish stock and bring to a simmer.
- Add the fideo noodles and cook for about 7 minutes, stirring occasionally, until the noodles start to absorb the liquid.
- Add the shrimp and mussels, cooking for an additional 5-7 minutes until the shrimp are pink and the mussels are open.
- Remove from heat and let sit for 2 minutes before garnishing with fresh parsley and serving.
