- Red bell pepper - 1, diced
- Zucchini - 1, diced
- Carrot - 1, diced
- Green beans - 100 grams, chopped
- Garlic - 2 cloves, minced
- Onion - 1 small, chopped
- Vegetable broth - 500 milliliters
- Smoked paprika - 1 teaspoon
- Saffron threads - a pinch
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Heat the olive oil in a large skillet over medium heat.
- Add the chopped onion and minced garlic, sautéing until translucent, about 2-3 minutes.
- Stir in the diced red bell pepper, zucchini, carrot, and green beans; cook for another 5 minutes, stirring occasionally.
- Add the fideuà noodles, stirring well to coat them in the oil and vegetables, and cook for 2 minutes.
- Pour in the vegetable broth, then add the smoked paprika, saffron, salt, and black pepper; bring to a boil.
- Once boiling, reduce the heat to low and let it simmer uncovered for about 10-12 minutes, or until the noodles are cooked and have absorbed most of the liquid.
- Remove from heat and let it sit for a couple of minutes before serving.
- Garnish with fresh parsley before serving.
