Ingredients

  • Fideuà noodles - 150 grams
  • Olive oil - 2 tablespoons
  • Red bell pepper - 1, diced
  • Zucchini - 1, diced
  • Carrot - 1, diced
  • Green beans - 100 grams, chopped
  • Garlic - 2 cloves, minced
  • Onion - 1 small, chopped
  • Vegetable broth - 500 milliliters
  • Smoked paprika - 1 teaspoon
  • Saffron threads - a pinch
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the chopped onion and minced garlic, sautéing until translucent, about 2-3 minutes.
  3. Stir in the diced red bell pepper, zucchini, carrot, and green beans; cook for another 5 minutes, stirring occasionally.
  4. Add the fideuà noodles, stirring well to coat them in the oil and vegetables, and cook for 2 minutes.
  5. Pour in the vegetable broth, then add the smoked paprika, saffron, salt, and black pepper; bring to a boil.
  6. Once boiling, reduce the heat to low and let it simmer uncovered for about 10-12 minutes, or until the noodles are cooked and have absorbed most of the liquid.
  7. Remove from heat and let it sit for a couple of minutes before serving.
  8. Garnish with fresh parsley before serving.
