  • Mixed seafood (e.g., shrimp, mussels, calamari) - 200 grams
  • Fresh parsley - for garnish

Steps

  1. In a large pan, heat the olive oil over medium heat. Add the minced garlic and chopped onion, sautéing until the onion becomes translucent.
  2. Add the diced red bell pepper and cook for an additional 3 minutes until softened.
  3. Stir in the grated tomato, paprika, and saffron, cooking for 2-3 minutes to blend the flavors.
  4. Add the fideos to the pan, stirring to coat them in the mixture for about 2 minutes.
  5. Pour in the fish stock and season with salt and black pepper. Bring to a boil, then reduce to a simmer and cook for 10 minutes without stirring, allowing the noodles to absorb the liquid.
  6. Add the mixed seafood to the pan, gently pressing them into the noodles. Cook for another 5-7 minutes until the seafood is cooked through and the noodles are tender.
  7. Remove from heat and let it sit for a couple of minutes before serving. Garnish with fresh parsley.
