- Mixed seafood (e.g., shrimp, mussels, calamari) - 200 grams
- Fresh parsley - for garnish
Steps
- In a large pan, heat the olive oil over medium heat. Add the minced garlic and chopped onion, sautéing until the onion becomes translucent.
- Add the diced red bell pepper and cook for an additional 3 minutes until softened.
- Stir in the grated tomato, paprika, and saffron, cooking for 2-3 minutes to blend the flavors.
- Add the fideos to the pan, stirring to coat them in the mixture for about 2 minutes.
- Pour in the fish stock and season with salt and black pepper. Bring to a boil, then reduce to a simmer and cook for 10 minutes without stirring, allowing the noodles to absorb the liquid.
- Add the mixed seafood to the pan, gently pressing them into the noodles. Cook for another 5-7 minutes until the seafood is cooked through and the noodles are tender.
- Remove from heat and let it sit for a couple of minutes before serving. Garnish with fresh parsley.
