- Red bell pepper - 1, diced
- Tomato - 1, diced
- Green peas - 100 grams
- Fish stock - 500 ml
- Shrimp - 200 grams, peeled and deveined
- Mussels - 100 grams, cleaned
- Squid - 100 grams, sliced
- Paprika - 1 teaspoon
- Saffron threads - a pinch
- Lemon - 1, juiced
- Fresh parsley - for garnish
- Salt - to taste
- Black pepper - to taste
Steps
- Heat the olive oil in a large skillet or paella pan over medium heat.
- Add the minced garlic and diced red bell pepper, sautéing for about 3 minutes until soft.
- Stir in the diced tomato and cook for another 2 minutes.
- Add the vermicelli pasta and toast it lightly for about 2-3 minutes, stirring frequently.
- Pour in the fish stock, and add the paprika, saffron, salt, and black pepper. Bring to a simmer.
- Add the shrimp, mussels, and squid to the pan. Stir gently and allow to cook for 8-10 minutes until the seafood is cooked through and the pasta has absorbed most of the liquid.
- Remove from heat, squeeze fresh lemon juice over the dish, and garnish with chopped parsley before serving.
