Ingredients

  • Vermicelli pasta - 150 grams

  • Garlic - 2 cloves, minced
  • Red bell pepper - 1, diced
  • Tomato - 1, diced
  • Green peas - 100 grams
  • Fish stock - 500 ml
  • Shrimp - 200 grams, peeled and deveined
  • Mussels - 100 grams, cleaned
  • Squid - 100 grams, sliced
  • Paprika - 1 teaspoon
  • Saffron threads - a pinch
  • Lemon - 1, juiced
  • Fresh parsley - for garnish
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Heat the olive oil in a large skillet or paella pan over medium heat.
  2. Add the minced garlic and diced red bell pepper, sautéing for about 3 minutes until soft.
  3. Stir in the diced tomato and cook for another 2 minutes.
  4. Add the vermicelli pasta and toast it lightly for about 2-3 minutes, stirring frequently.
  5. Pour in the fish stock, and add the paprika, saffron, salt, and black pepper. Bring to a simmer.
  6. Add the shrimp, mussels, and squid to the pan. Stir gently and allow to cook for 8-10 minutes until the seafood is cooked through and the pasta has absorbed most of the liquid.
  7. Remove from heat, squeeze fresh lemon juice over the dish, and garnish with chopped parsley before serving.
