Ingredients

  • Shrimp - 200 grams, peeled and deveined
  • Squid - 100 grams, cleaned and sliced
  • Mussels - 100 grams, cleaned
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Cherry tomatoes - 150 grams, halved
  • Red bell pepper - 1, diced
  • Coconut flour - 2 tablespoons
  • Fish stock - 500 ml
  • Paprika - 1 teaspoon
  • Saffron threads - a pinch
  • Parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 200°C (390°F).
  2. In a large oven-safe skillet, heat 2 tablespoons of olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  3. Add the diced red bell pepper and halved cherry tomatoes to the skillet. Cook for 5-7 minutes until softened.
  4. Stir in the shrimp, squid, and mussels. Cook for another 5 minutes until the seafood starts to cook through.
  5. Sprinkle the coconut flour over the mixture and stir well to combine, cooking for 2 minutes.
  6. Add the fish stock, paprika, saffron, salt, and black pepper. Bring to a gentle simmer.
  7. Once simmering, remove from heat and sprinkle chopped parsley on top.
  8. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the seafood is cooked through and the liquid is absorbed.
  9. Remove from the oven and let it sit for a few minutes before serving.
