- Fresh parsley - 2 tablespoons, chopped
Steps
- Heat the olive oil in a large skillet over medium heat.
- Add the chopped onion and sauté for about 3-4 minutes until translucent.
- Stir in the minced garlic and cook for an additional 1 minute until fragrant.
- Add the sliced red bell pepper and julienned zucchini to the skillet, sautéing for 5-7 minutes until the vegetables are tender.
- While the vegetables are cooking, prepare the tofu noodles according to package instructions, usually by rinsing and draining them.
- Once the vegetables are cooked, add the tofu noodles to the skillet.
- Sprinkle the smoked paprika, salt, and black pepper over the mixture, tossing everything to combine well.
- Cook for an additional 2-3 minutes, allowing the flavors to meld together.
- Remove from heat, garnish with fresh parsley, and serve hot.
