  • Zucchini - 1 medium, julienned
  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Smoked paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the chopped onion and sauté for about 3-4 minutes until translucent.
  3. Stir in the minced garlic and cook for an additional 1 minute until fragrant.
  4. Add the sliced red bell pepper and julienned zucchini to the skillet, sautéing for 5-7 minutes until the vegetables are tender.
  5. While the vegetables are cooking, prepare the tofu noodles according to package instructions, usually by rinsing and draining them.
  6. Once the vegetables are cooked, add the tofu noodles to the skillet.
  7. Sprinkle the smoked paprika, salt, and black pepper over the mixture, tossing everything to combine well.
  8. Cook for an additional 2-3 minutes, allowing the flavors to meld together.
  9. Remove from heat, garnish with fresh parsley, and serve hot.
