  • Cherry tomatoes - 100 grams, halved
  • Red bell pepper - 1 medium, diced
  • Onion - 1 small, chopped
  • Ground cumin - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - 2 tablespoons, chopped
  • Lime - 1, juiced
  • Parmesan cheese - 30 grams, grated (optional)

Steps

  1. Prepare the nopal cactus by rinsing it under cold water, then cut it into thin strips.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Add the diced red bell pepper and sauté for another 2-3 minutes until slightly softened.
  5. Add the nopal cactus strips to the skillet and cook for about 5-7 minutes until they start to soften and become tender.
  6. Stir in the cherry tomatoes, ground cumin, smoked paprika, salt, and black pepper. Cook for an additional 5 minutes until the tomatoes are softened.
  7. Remove from heat and stir in the lime juice and fresh cilantro.
  8. Serve hot, garnished with grated Parmesan cheese if desired.
