- Red bell pepper - 1 medium, diced
- Onion - 1 small, chopped
- Ground cumin - 1 teaspoon
- Smoked paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - 2 tablespoons, chopped
- Lime - 1, juiced
- Parmesan cheese - 30 grams, grated (optional)
Steps
- Prepare the nopal cactus by rinsing it under cold water, then cut it into thin strips.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the diced red bell pepper and sauté for another 2-3 minutes until slightly softened.
- Add the nopal cactus strips to the skillet and cook for about 5-7 minutes until they start to soften and become tender.
- Stir in the cherry tomatoes, ground cumin, smoked paprika, salt, and black pepper. Cook for an additional 5 minutes until the tomatoes are softened.
- Remove from heat and stir in the lime juice and fresh cilantro.
- Serve hot, garnished with grated Parmesan cheese if desired.
