- Spinach - 200 grams
- Zucchini - 200 grams

- Parmesan cheese - 30 grams, grated
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Red pepper flakes - 1/4 teaspoon (optional)
- Fresh basil - 5 leaves, chopped
Steps
- Spiralize the zucchini using a spiralizer to create zucchini noodles (fideos). Set aside.
- In a large skillet, heat olive oil over medium heat and add the chopped onion. Sauté until translucent, about 5 minutes.
- Add the minced garlic to the skillet and cook for an additional 1 minute until fragrant.
- Stir in the spinach and cook until wilted, about 3-4 minutes.
- Add the zucchini noodles to the skillet, mixing everything well. Cook for another 5 minutes until the zucchini is tender but still al dente.
- Season with salt, black pepper, and red pepper flakes if using. Toss to combine.
- Remove from heat and stir in the grated Parmesan cheese and chopped basil before serving.
