Ingredients

  • Spinach - 200 grams
  • Zucchini - 200 grams
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Onion - 1 small, finely chopped
  • Parmesan cheese - 30 grams, grated
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Red pepper flakes - 1/4 teaspoon (optional)
  • Fresh basil - 5 leaves, chopped

Steps

  1. Spiralize the zucchini using a spiralizer to create zucchini noodles (fideos). Set aside.
  2. In a large skillet, heat olive oil over medium heat and add the chopped onion. Sauté until translucent, about 5 minutes.
  3. Add the minced garlic to the skillet and cook for an additional 1 minute until fragrant.
  4. Stir in the spinach and cook until wilted, about 3-4 minutes.
  5. Add the zucchini noodles to the skillet, mixing everything well. Cook for another 5 minutes until the zucchini is tender but still al dente.
  6. Season with salt, black pepper, and red pepper flakes if using. Toss to combine.
  7. Remove from heat and stir in the grated Parmesan cheese and chopped basil before serving.
