Ingredients

  • Cauliflower - 300 grams

  • Cherry tomatoes - 200 grams, halved
  • Bell pepper (red or yellow) - 1 medium, diced
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped
  • Parmesan cheese - 30 grams, grated

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Remove the leaves from the cauliflower and cut it into florets. Use a food processor to pulse the florets until they resemble rice or pasta.
  3. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  4. Add the diced bell pepper to the skillet and cook for 3-4 minutes until softened.
  5. Stir in the cauliflower 'noodles' and cook for another 5 minutes, stirring occasionally, until they begin to soften.
  6. Add the halved cherry tomatoes, paprika, salt, and black pepper. Cook for an additional 5 minutes until the tomatoes are tender.
  7. Transfer the mixture to a baking dish and sprinkle with grated Parmesan cheese.
  8. Bake in the preheated oven for 10-15 minutes until the cheese is golden and bubbly.
  9. Remove from the oven, garnish with chopped parsley, and serve warm.
