- Bell pepper (red or yellow) - 1 medium, diced
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped
- Parmesan cheese - 30 grams, grated
Steps
- Preheat the oven to 200°C (400°F).
- Remove the leaves from the cauliflower and cut it into florets. Use a food processor to pulse the florets until they resemble rice or pasta.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the diced bell pepper to the skillet and cook for 3-4 minutes until softened.
- Stir in the cauliflower 'noodles' and cook for another 5 minutes, stirring occasionally, until they begin to soften.
- Add the halved cherry tomatoes, paprika, salt, and black pepper. Cook for an additional 5 minutes until the tomatoes are tender.
- Transfer the mixture to a baking dish and sprinkle with grated Parmesan cheese.
- Bake in the preheated oven for 10-15 minutes until the cheese is golden and bubbly.
- Remove from the oven, garnish with chopped parsley, and serve warm.
