- Cherry tomatoes - 100 grams, halved
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh basil - 10 grams, chopped
- Grated Parmesan cheese - 30 grams (optional)
Steps
- Heat olive oil in a large skillet over medium heat.
- Add the chopped onion and minced garlic; sauté until the onion is translucent, about 3-4 minutes.
- Stir in the cherry tomatoes and cook for another 2-3 minutes until they start to soften.
- Add the pumpkin puree, paprika, salt, and black pepper; mix well and let simmer for 5 minutes.
- In the meantime, spiralize the zucchini into noodle shapes.
- Add the spiralized zucchini to the skillet and toss to combine with the sauce; cook for an additional 5-7 minutes until the zucchini is tender but still slightly crisp.
- Remove from heat and stir in the fresh basil.
- Serve hot, topped with grated Parmesan cheese if desired.
