Ingredients

  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Cherry tomatoes - 100 grams, halved
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh basil - 10 grams, chopped
  • Grated Parmesan cheese - 30 grams (optional)

Steps

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the chopped onion and minced garlic; sauté until the onion is translucent, about 3-4 minutes.
  3. Stir in the cherry tomatoes and cook for another 2-3 minutes until they start to soften.
  4. Add the pumpkin puree, paprika, salt, and black pepper; mix well and let simmer for 5 minutes.
  5. In the meantime, spiralize the zucchini into noodle shapes.
  6. Add the spiralized zucchini to the skillet and toss to combine with the sauce; cook for an additional 5-7 minutes until the zucchini is tender but still slightly crisp.
  7. Remove from heat and stir in the fresh basil.
  8. Serve hot, topped with grated Parmesan cheese if desired.
