Ingredients

  • Zucchini - 2 medium
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Turmeric powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cherry tomatoes - 150 grams, halved
  • Spinach - 100 grams, fresh
  • Parmesan cheese - 30 grams, grated
  • Fresh basil - 2 tablespoons, chopped

Steps

  1. Spiralize the zucchini using a spiralizer or a vegetable peeler to create zucchini noodles (fideos).
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
  3. Stir in the turmeric powder, paprika, salt, and black pepper, and cook for another minute to release the spices' flavors.
  4. Add the cherry tomatoes to the skillet and cook for about 3-4 minutes until they begin to soften.
  5. Add the zucchini noodles and spinach to the skillet, tossing gently to combine with the tomato and spice mixture. Cook for an additional 5-7 minutes until the zucchini is tender but still slightly crisp.
  6. Remove from heat and stir in the grated Parmesan cheese and fresh basil before serving.
