Steps
- Spiralize the zucchini using a spiralizer or a vegetable peeler to create zucchini noodles (fideos).
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
- Stir in the turmeric powder, paprika, salt, and black pepper, and cook for another minute to release the spices' flavors.
- Add the cherry tomatoes to the skillet and cook for about 3-4 minutes until they begin to soften.
- Add the zucchini noodles and spinach to the skillet, tossing gently to combine with the tomato and spice mixture. Cook for an additional 5-7 minutes until the zucchini is tender but still slightly crisp.
