Steps
- Wash and slice the eggplant into thin strips. Sprinkle with salt and let them sit for about 15 minutes to draw out moisture.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
- Rinse and pat dry the eggplant slices, then add them to the skillet. Cook for about 5-7 minutes, stirring occasionally, until they start to soften.
