  • Fresh basil - a handful, chopped

Steps

  1. Wash and slice the eggplant into thin strips. Sprinkle with salt and let them sit for about 15 minutes to draw out moisture.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  3. Rinse and pat dry the eggplant slices, then add them to the skillet. Cook for about 5-7 minutes, stirring occasionally, until they start to soften.
  4. Add the diced red bell pepper and spiralized zucchini to the skillet. Cook for an additional 5 minutes, stirring regularly.
