- Vegetable broth - 500 ml
- Tomato paste - 2 tablespoons
- Smoked paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish, chopped
Steps
- Heat the olive oil in a large skillet over medium heat.
- Add the chopped onion and minced garlic, and sauté for 2-3 minutes until translucent.
- Stir in the diced red bell pepper, zucchini, and carrot, cooking for an additional 5-7 minutes until the vegetables are tender.
- Add the smoked paprika, salt, and black pepper, stirring to combine.
- Incorporate the tomato paste and mix well with the vegetables.
- Pour in the vegetable broth and bring the mixture to a boil.
- Once boiling, add the fideos and reduce the heat to a simmer.
- Cook for about 10-12 minutes, stirring occasionally, until the fideos are al dente and the liquid is mostly absorbed.
- Remove from heat and let it sit for a couple of minutes to thicken.
- Serve hot, garnished with chopped fresh parsley.
