- Fideos (thin noodles) - 200g
- Olive oil - 3 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Fresh parsley - 50g, chopped
- Fresh cilantro - 30g, chopped
- Green bell pepper - 1 small, diced
- Spinach - 100g, fresh
- Vegetable broth - 400ml
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Pine nuts - 30g, toasted (for garnish)
Steps
- In a large skillet, heat olive oil over medium heat. Add the minced garlic and chopped onion, sauté until the onion is translucent.
- Add the diced green bell pepper and cook for another 5 minutes until softened.
- Stir in the chopped parsley and cilantro, followed by the fresh spinach. Cook until the spinach wilts.
- Pour in the vegetable broth and bring to a simmer. Let it cook for 5 minutes to allow the flavors to meld.
- Using an immersion blender, blend the mixture until smooth. If you do not have an immersion blender, carefully transfer it to a regular blender and blend until smooth.
- Return the blended sauce to the skillet and bring it to a gentle simmer. Add the fideos and cook according to package instructions, usually about 10-12 minutes, stirring occasionally.
- Once the fideos are cooked, add lemon juice, and season with salt and black pepper to taste.
- Serve hot, garnished with toasted pine nuts.
