Ingredients

  • Fideos (thin noodles) - 200g
  • Olive oil - 3 tablespoons
  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Fresh parsley - 50g, chopped
  • Fresh cilantro - 30g, chopped
  • Green bell pepper - 1 small, diced
  • Spinach - 100g, fresh
  • Vegetable broth - 400ml
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Pine nuts - 30g, toasted (for garnish)

Steps

  1. In a large skillet, heat olive oil over medium heat. Add the minced garlic and chopped onion, sauté until the onion is translucent.
  2. Add the diced green bell pepper and cook for another 5 minutes until softened.
  3. Stir in the chopped parsley and cilantro, followed by the fresh spinach. Cook until the spinach wilts.
  4. Pour in the vegetable broth and bring to a simmer. Let it cook for 5 minutes to allow the flavors to meld.
  5. Using an immersion blender, blend the mixture until smooth. If you do not have an immersion blender, carefully transfer it to a regular blender and blend until smooth.
  6. Return the blended sauce to the skillet and bring it to a gentle simmer. Add the fideos and cook according to package instructions, usually about 10-12 minutes, stirring occasionally.
  7. Once the fideos are cooked, add lemon juice, and season with salt and black pepper to taste.
  8. Serve hot, garnished with toasted pine nuts.
