Steps
- Heat olive oil in a large skillet over medium heat. Add the minced garlic and chopped onion, sautéing until softened and fragrant, about 3-4 minutes.
- Stir in the chopped red bell pepper and cook for an additional 3 minutes until it starts to soften.
- Add the diced tomatoes (with their juices), paprika, salt, and black pepper. Stir well and let it simmer for about 10 minutes, allowing the flavors to meld.
- Pour in the vegetable broth and bring the mixture to a gentle boil.
- Add the fideos to the skillet, stirring to combine. Reduce heat to low, cover, and cook for about 10-12 minutes, or until the fideos are tender and have absorbed most of the liquid, stirring occasionally to prevent sticking.
