- Nutritional yeast - 2 tablespoons
- Lemon juice - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - for garnish (optional)
Steps
- Toast the raw almonds in a dry skillet over medium heat for about 5 minutes, stirring frequently until golden brown and fragrant. Remove from heat and let cool.
- In the same skillet, add olive oil and sauté minced garlic for 1-2 minutes until golden, being careful not to burn it.
- Cook the fideos according to the package instructions in a separate pot of salted boiling water until al dente, then drain and set aside.
- In a blender, combine the toasted almonds, sautéed garlic, vegetable broth, nutritional yeast, lemon juice, salt, and black pepper. Blend until smooth and creamy.
- In the skillet, add the drained fideos and pour the almond sauce over them, stirring gently to combine. Cook on low heat for 2-3 minutes until heated through.
