  • Garlic - 2 cloves
  • Olive oil - 2 tablespoons
  • Vegetable broth - 200 ml
  • Nutritional yeast - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - for garnish (optional)

Steps

  1. Toast the raw almonds in a dry skillet over medium heat for about 5 minutes, stirring frequently until golden brown and fragrant. Remove from heat and let cool.
  2. In the same skillet, add olive oil and sauté minced garlic for 1-2 minutes until golden, being careful not to burn it.
  3. Cook the fideos according to the package instructions in a separate pot of salted boiling water until al dente, then drain and set aside.
  4. In a blender, combine the toasted almonds, sautéed garlic, vegetable broth, nutritional yeast, lemon juice, salt, and black pepper. Blend until smooth and creamy.
  5. In the skillet, add the drained fideos and pour the almond sauce over them, stirring gently to combine. Cook on low heat for 2-3 minutes until heated through.
  6. Serve hot, garnished with fresh parsley if desired.
