Ingredients

  • Fideos (thin spaghetti) - 200g
  • Fresh basil leaves - 50g
  • Pine nuts - 30g
  • Garlic - 2 cloves
  • Parmesan cheese - 30g (grated)
  • Olive oil - 80ml
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Cherry tomatoes - 100g (halved)
  • Arugula - 30g (for garnish)

Steps

  1. Cook the fideos in a pot of salted boiling water according to package instructions until al dente, usually around 8-10 minutes. Drain and set aside, reserving some pasta water.
  2. While the fideos are cooking, prepare the pesto by combining the fresh basil leaves, pine nuts, garlic, grated Parmesan cheese, lemon juice, and olive oil in a food processor. Blend until smooth, adding a few tablespoons of reserved pasta water if necessary to achieve a creamy consistency.
  3. Season the pesto with salt and black pepper to taste. Adjust the consistency with more olive oil or pasta water if needed.
  4. In a large mixing bowl, combine the drained fideos with the basil pesto, tossing to coat the pasta evenly.
  5. Add the halved cherry tomatoes and gently mix to combine.
  6. Serve immediately, garnished with fresh arugula and additional grated Parmesan if desired.
