- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Red bell pepper - 1, diced
- Tomato - 1 large, chopped
- Fish stock - 500 milliliters
- Paprika - 1 teaspoon
- Saffron threads - a pinch
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, sautéing until translucent.
- Add the diced red bell pepper and chopped tomato, cooking for about 5 minutes until softened.
- Stir in the paprika and saffron, allowing the spices to release their flavors for 1 minute.
- Pour in the fish stock and bring to a gentle boil. Season with salt and pepper.
- Add the fideos to the skillet, stirring well to combine. Cook for 8-10 minutes, or until the pasta is al dente, stirring occasionally.
- While the pasta cooks, season the fish fillets with salt and pepper. Gently place them on top of the pasta during the last 5 minutes of cooking.
- Once the fish is cooked through, remove the skillet from heat and let it sit for a couple of minutes.
- Serve hot, garnished with fresh parsley.
