  • Red bell pepper - 1, diced
  • Tomato - 1 large, chopped
  • Fish stock - 500 milliliters
  • Paprika - 1 teaspoon
  • Saffron threads - a pinch
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, sautéing until translucent.
  2. Add the diced red bell pepper and chopped tomato, cooking for about 5 minutes until softened.
  3. Stir in the paprika and saffron, allowing the spices to release their flavors for 1 minute.
  4. Pour in the fish stock and bring to a gentle boil. Season with salt and pepper.
  5. Add the fideos to the skillet, stirring well to combine. Cook for 8-10 minutes, or until the pasta is al dente, stirring occasionally.
  6. While the pasta cooks, season the fish fillets with salt and pepper. Gently place them on top of the pasta during the last 5 minutes of cooking.
  7. Once the fish is cooked through, remove the skillet from heat and let it sit for a couple of minutes.
  8. Serve hot, garnished with fresh parsley.
