  • Red bell pepper, diced - 1 medium
  • Diced tomatoes (canned) - 200 grams
  • Paprika (smoked) - 1 teaspoon
  • Chicken broth - 400 ml
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley, chopped - 2 tablespoons

Steps

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the sliced chorizo and cook until browned, about 3-4 minutes.
  3. Remove the chorizo from the skillet and set aside, leaving the oil in the pan.
  4. Add the chopped onion and red bell pepper to the skillet, cooking until softened, about 5 minutes.
  5. Stir in the minced garlic and cook for an additional minute until fragrant.
  6. Add the diced tomatoes, paprika, and cooked chorizo back into the skillet, mixing well.
  7. Pour in the chicken broth and bring to a simmer.
  8. Add the gluten-free fideos pasta to the skillet, stirring to combine.
  9. Cover and cook for 10-12 minutes, stirring occasionally, until the pasta is tender and has absorbed most of the broth.
  10. Season with salt and black pepper to taste.
