- Fideos (or thin spaghetti) - 150 grams
- Squid, cleaned and sliced - 200 grams
- Olive oil - 2 tablespoons
- Garlic, minced - 2 cloves
- Red bell pepper, diced - 1 medium
- Tomato puree - 100 grams
- Vegetable broth - 300 milliliters
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley, chopped - 2 tablespoons
- Lemon wedges - for serving
Steps
- Heat olive oil in a large skillet over medium heat. Add minced garlic and diced red bell pepper, sautéing until softened, about 3-4 minutes.
- Add the sliced squid to the skillet and cook for 2-3 minutes until they turn opaque.
- Stir in the tomato puree, paprika, salt, and black pepper. Cook for another 2 minutes to combine the flavors.
- Add the fideos to the skillet, followed by the vegetable broth. Bring to a simmer and cook for about 10-12 minutes, or until the pasta is al dente and has absorbed most of the liquid.
- Remove from heat and let it rest for a couple of minutes. Garnish with chopped parsley.
- Serve with lemon wedges on the side for an extra zing.
