  • Fideos (or thin spaghetti) - 150 grams
  • Squid, cleaned and sliced - 200 grams
  • Olive oil - 2 tablespoons
  • Garlic, minced - 2 cloves
  • Red bell pepper, diced - 1 medium
  • Tomato puree - 100 grams
  • Vegetable broth - 300 milliliters
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley, chopped - 2 tablespoons
  • Lemon wedges - for serving

Steps

  1. Heat olive oil in a large skillet over medium heat. Add minced garlic and diced red bell pepper, sautéing until softened, about 3-4 minutes.
  2. Add the sliced squid to the skillet and cook for 2-3 minutes until they turn opaque.
  3. Stir in the tomato puree, paprika, salt, and black pepper. Cook for another 2 minutes to combine the flavors.
  4. Add the fideos to the skillet, followed by the vegetable broth. Bring to a simmer and cook for about 10-12 minutes, or until the pasta is al dente and has absorbed most of the liquid.
  5. Remove from heat and let it rest for a couple of minutes. Garnish with chopped parsley.
  6. Serve with lemon wedges on the side for an extra zing.
