  • Zucchini - 2 medium (about 300 grams)
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Vegetable broth - 500 milliliters
  • Tomato paste - 1 tablespoon
  • Smoked paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Slice the zucchini into thin rounds and add them to the skillet. Cook for 5-7 minutes until they begin to soften.
  4. Stir in the tomato paste and smoked paprika, mixing well to combine with the zucchini.
  5. Add the fideos to the skillet along with the vegetable broth. Bring to a boil.
  6. Reduce the heat to low and simmer for 10-12 minutes, or until the fideos are al dente and have absorbed most of the liquid.
  7. Season with salt and black pepper to taste.
  8. Serve hot, garnished with fresh parsley.
