- Vegetable broth - 500 milliliters
- Tomato paste - 1 tablespoon
- Smoked paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Heat the olive oil in a large skillet over medium heat.
- Add the minced garlic and sauté for about 1 minute until fragrant.
- Slice the zucchini into thin rounds and add them to the skillet. Cook for 5-7 minutes until they begin to soften.
- Stir in the tomato paste and smoked paprika, mixing well to combine with the zucchini.
- Add the fideos to the skillet along with the vegetable broth. Bring to a boil.
- Reduce the heat to low and simmer for 10-12 minutes, or until the fideos are al dente and have absorbed most of the liquid.
- Season with salt and black pepper to taste.
- Serve hot, garnished with fresh parsley.
