- Fideos pasta - 150 grams
- Red bell pepper - 1 medium, diced
- Zucchini - 1 medium, diced
- Eggplant - 1 small, diced
- Tomato - 2 medium, chopped
- Garlic - 2 cloves, minced
- Olive oil - 3 tablespoons
- Vegetable broth - 500 milliliters
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh basil - for garnish
Steps
- Preheat the oven to 200°C (400°F).
- In a baking dish, combine the diced red bell pepper, zucchini, and eggplant with 2 tablespoons of olive oil, salt, and black pepper. Roast in the oven for about 20 minutes or until the vegetables are tender.
- While the vegetables are roasting, heat the remaining 1 tablespoon of olive oil in a large skillet over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
- Add the chopped tomatoes and paprika to the skillet, cooking for another 3-4 minutes until the tomatoes break down slightly.
- Stir in the fideos pasta and the vegetable broth. Bring to a boil, then reduce the heat to low and cover. Cook for about 8-10 minutes or until the pasta is al dente and has absorbed most of the liquid.
- Once the vegetables are done roasting, fold them into the pasta mixture. Adjust the seasoning with additional salt and pepper if needed.
- Serve hot, garnished with fresh basil.
