- Fideos (thin noodles) - 150 grams
- Olive oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Onion - 1 small, finely chopped
- Red bell pepper - 1, diced
- Zucchini - 1 small, diced
- Tomato - 1 medium, diced
- Vegetable broth - 500 milliliters
- Saffron threads - 1 pinch
- Smoked paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Heat olive oil in a large skillet over medium heat.
- Add minced garlic and chopped onion, sautéing until the onion is translucent, about 3-4 minutes.
- Stir in the diced red bell pepper and zucchini, cooking for another 5 minutes until softened.
- Add the diced tomato, saffron, smoked paprika, salt, and black pepper. Cook for an additional 2-3 minutes until the tomato starts to break down.
- Pour in the vegetable broth and bring the mixture to a boil.
- Once boiling, add the fideos and reduce the heat to a simmer. Cook for about 10-12 minutes, stirring occasionally, until the noodles are al dente and have absorbed most of the broth.
- Remove from heat and let sit for a couple of minutes to thicken.
- Serve hot, garnished with fresh parsley.
