Ingredients

  • Fideos (thin noodles) - 150 grams
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Onion - 1 small, finely chopped
  • Red bell pepper - 1, diced
  • Zucchini - 1 small, diced
  • Tomato - 1 medium, diced
  • Vegetable broth - 500 milliliters
  • Saffron threads - 1 pinch
  • Smoked paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Heat olive oil in a large skillet over medium heat.
  2. Add minced garlic and chopped onion, sautéing until the onion is translucent, about 3-4 minutes.
  3. Stir in the diced red bell pepper and zucchini, cooking for another 5 minutes until softened.
  4. Add the diced tomato, saffron, smoked paprika, salt, and black pepper. Cook for an additional 2-3 minutes until the tomato starts to break down.
  5. Pour in the vegetable broth and bring the mixture to a boil.
  6. Once boiling, add the fideos and reduce the heat to a simmer. Cook for about 10-12 minutes, stirring occasionally, until the noodles are al dente and have absorbed most of the broth.
  7. Remove from heat and let sit for a couple of minutes to thicken.
  8. Serve hot, garnished with fresh parsley.
