  • Green beans - 100 grams, chopped
  • Tomato - 2 medium, diced
  • Vegetable broth - 500 ml
  • Paprika - 1 teaspoon
  • Saffron - a pinch
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Heat the olive oil in a large skillet over medium heat. Add the minced garlic and diced onion, sautéing until translucent.
  2. Add the diced red bell pepper, zucchini, carrot, and green beans to the skillet. Cook for about 5-7 minutes, stirring occasionally until the vegetables start to soften.
  3. Stir in the diced tomatoes, paprika, saffron, salt, and black pepper. Cook for an additional 5 minutes to combine the flavors.
  4. Add the fideos pasta to the skillet, stirring to coat it with the vegetable mixture.
  5. Pour in the vegetable broth and bring to a boil. Reduce the heat to low, cover, and let it simmer for about 10-12 minutes, or until the fideos are tender and have absorbed most of the broth.
  6. Once cooked, remove from heat and let it sit covered for a couple of minutes. Fluff with a fork before serving.
  7. Garnish with freshly chopped parsley and serve warm.
