- Zucchini - 1, diced
- Carrot - 1, diced
- Green beans - 100 grams, chopped
- Tomato - 2 medium, diced
- Vegetable broth - 500 ml
- Paprika - 1 teaspoon
- Saffron - a pinch
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Heat the olive oil in a large skillet over medium heat. Add the minced garlic and diced onion, sautéing until translucent.
- Add the diced red bell pepper, zucchini, carrot, and green beans to the skillet. Cook for about 5-7 minutes, stirring occasionally until the vegetables start to soften.
- Stir in the diced tomatoes, paprika, saffron, salt, and black pepper. Cook for an additional 5 minutes to combine the flavors.
- Add the fideos pasta to the skillet, stirring to coat it with the vegetable mixture.
- Pour in the vegetable broth and bring to a boil. Reduce the heat to low, cover, and let it simmer for about 10-12 minutes, or until the fideos are tender and have absorbed most of the broth.
- Once cooked, remove from heat and let it sit covered for a couple of minutes. Fluff with a fork before serving.
- Garnish with freshly chopped parsley and serve warm.
