- Parsley - 2 tablespoons, chopped (for garnish)
Steps
- Heat the olive oil in a medium saucepan over medium heat.
- Add the minced garlic and chopped onion, sautéing until the onion becomes translucent, about 3-4 minutes.
- Stir in the diced red bell pepper and tomato, cooking for another 5 minutes until softened.
- Add the fideo pasta to the saucepan, stirring to coat it with the vegetable mixture.
- Pour in the vegetable broth and bring to a boil.
- Add the smoked paprika, saffron, salt, and black pepper, then reduce the heat to low.
- Cover and simmer for about 10-15 minutes, or until the pasta is tender and has absorbed most of the liquid.
- Remove from heat and let it sit covered for 5 minutes.
