  • Parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Heat the olive oil in a medium saucepan over medium heat.
  2. Add the minced garlic and chopped onion, sautéing until the onion becomes translucent, about 3-4 minutes.
  3. Stir in the diced red bell pepper and tomato, cooking for another 5 minutes until softened.
  4. Add the fideo pasta to the saucepan, stirring to coat it with the vegetable mixture.
  5. Pour in the vegetable broth and bring to a boil.
  6. Add the smoked paprika, saffron, salt, and black pepper, then reduce the heat to low.
