- Garlic, minced - 2 cloves
- Red bell pepper, diced - 1 medium
- Zucchini, diced - 1 medium
- Carrot, diced - 1 medium
- Tomato, diced - 1 medium
- Vegetable broth - 500 ml
- Smoked paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley, chopped - 2 tablespoons
- Lemon, juiced - 1 tablespoon
Steps
- In a large pan, heat the olive oil over medium heat and add the minced garlic, sautéing until fragrant, about 1 minute.
- Add the diced red bell pepper, zucchini, and carrot to the pan, cooking for about 5 minutes until they start to soften.
- Stir in the diced tomato, smoked paprika, salt, and black pepper, cooking for another 3 minutes.
- Pour in the vegetable broth and bring to a simmer. Once simmering, add the fideos to the pan.
- Cook the fideos in the broth for about 10-12 minutes, stirring occasionally, until they are al dente and have absorbed most of the liquid.
- Remove from heat and stir in the fresh parsley and lemon juice.
- Serve hot, garnished with additional parsley if desired.
