  • Fideos (thin pasta) - 200 grams

  • Red bell pepper, diced - 1 medium
  • Zucchini, diced - 1 medium
  • Carrot, diced - 1 medium
  • Tomato, diced - 1 medium
  • Vegetable broth - 500 ml
  • Smoked paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley, chopped - 2 tablespoons
  • Lemon, juiced - 1 tablespoon

Steps

  1. In a large pan, heat the olive oil over medium heat and add the minced garlic, sautéing until fragrant, about 1 minute.
  2. Add the diced red bell pepper, zucchini, and carrot to the pan, cooking for about 5 minutes until they start to soften.
  3. Stir in the diced tomato, smoked paprika, salt, and black pepper, cooking for another 3 minutes.
  4. Pour in the vegetable broth and bring to a simmer. Once simmering, add the fideos to the pan.
  5. Cook the fideos in the broth for about 10-12 minutes, stirring occasionally, until they are al dente and have absorbed most of the liquid.
  6. Remove from heat and stir in the fresh parsley and lemon juice.
  7. Serve hot, garnished with additional parsley if desired.
