Steps

  1. Preheat your grill or grill pan over medium-high heat.
  2. In a large bowl, combine the sliced bell peppers, zucchini, red onion, and mushrooms.
  3. Drizzle the olive oil over the vegetables and sprinkle in the smoked paprika, cumin, chili powder, garlic powder, salt, and black pepper. Toss until evenly coated.
