Ingredients

  • White beans (canned or dried) - 200 grams
  • Chorizo sausage - 100 grams
  • Morcon (or similar) sausage - 50 grams
  • Smoked bacon - 50 grams
  • Onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Paprika - 1 teaspoon
  • Bay leaf - 1 leaf
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Water - 500 milliliters

Steps

  1. If using dried beans, soak them overnight and cook until tender, then drain. If using canned, rinse and set aside.
  2. In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until translucent, about 5 minutes.
  3. Add the diced carrot and cook for another 5 minutes, stirring occasionally.
  4. Slice the chorizo, morcon, and bacon into bite-sized pieces and add them to the pot. Cook for 5-7 minutes until they start to brown.
  5. Stir in the paprika, bay leaf, and cooked or canned beans, mixing everything thoroughly.
  6. Pour in the water and bring the mixture to a simmer. Season with salt and black pepper to taste.
  7. Cover and let it simmer gently for about 30 minutes, stirring occasionally, until the flavors meld together.
  8. Remove the bay leaf before serving. Adjust seasoning if necessary and serve warm.
