- White beans (canned or dried) - 200 grams
- Chorizo sausage - 100 grams
- Morcon (or similar) sausage - 50 grams
- Smoked bacon - 50 grams
- Onion - 1 medium, chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Paprika - 1 teaspoon
- Bay leaf - 1 leaf
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Water - 500 milliliters
Steps
- If using dried beans, soak them overnight and cook until tender, then drain. If using canned, rinse and set aside.
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until translucent, about 5 minutes.
- Add the diced carrot and cook for another 5 minutes, stirring occasionally.
- Slice the chorizo, morcon, and bacon into bite-sized pieces and add them to the pot. Cook for 5-7 minutes until they start to brown.
- Stir in the paprika, bay leaf, and cooked or canned beans, mixing everything thoroughly.
- Pour in the water and bring the mixture to a simmer. Season with salt and black pepper to taste.
- Cover and let it simmer gently for about 30 minutes, stirring occasionally, until the flavors meld together.
- Remove the bay leaf before serving. Adjust seasoning if necessary and serve warm.
