Steps

  1. Start by spiralizing the red and yellow bell peppers and the zucchini to create the 'pasta'. Set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the halved cherry tomatoes to the skillet and cook for another 3-4 minutes until they start to soften.
  4. Stir in the spiralized bell peppers and zucchini, cooking for an additional 5-7 minutes until they are tender but still crisp.
  5. Add the spinach to the skillet and cook until wilted, about 2 minutes. Season with salt and black pepper to taste.
