- Red bell pepper - 1 medium, diced
- Spanish chorizo - 100 grams, sliced
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped
- Parmesan cheese - 30 grams, grated (optional)
Steps
- Preheat the oven to 200°C (400°F).
- Cut the cauliflower into florets and steam for about 5-7 minutes until tender.
- Using a food processor, pulse the steamed cauliflower until it resembles spaghetti strands. Set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
- Add the sliced chorizo and cook for another 3-4 minutes until it starts to brown.
- Stir in the diced red bell pepper and halved cherry tomatoes, cooking for an additional 5 minutes until the vegetables are tender.
- Add the cauliflower spaghetti to the skillet, tossing everything together. Season with paprika, salt, and black pepper.
- Cook for another 2-3 minutes until heated through.
- Serve hot, garnished with fresh parsley and grated Parmesan cheese if desired.
