Ingredients

  • Cherry tomatoes - 200 grams, halved
  • Red bell pepper - 1 medium, diced
  • Spanish chorizo - 100 grams, sliced
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped
  • Parmesan cheese - 30 grams, grated (optional)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Cut the cauliflower into florets and steam for about 5-7 minutes until tender.
  3. Using a food processor, pulse the steamed cauliflower until it resembles spaghetti strands. Set aside.
  4. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
  5. Add the sliced chorizo and cook for another 3-4 minutes until it starts to brown.
  6. Stir in the diced red bell pepper and halved cherry tomatoes, cooking for an additional 5 minutes until the vegetables are tender.
  7. Add the cauliflower spaghetti to the skillet, tossing everything together. Season with paprika, salt, and black pepper.
  8. Cook for another 2-3 minutes until heated through.
  9. Serve hot, garnished with fresh parsley and grated Parmesan cheese if desired.
