Steps
- Bring a large pot of salted water to a boil. Add the broccoli florets and cook for 3-4 minutes until tender but still bright green. Remove the broccoli and set aside, reserving the water.
- In the same pot of boiling water, add the cherry tomatoes and cook for 2-3 minutes until softened. Drain and set aside.
- Using a food processor or a blender, pulse the cooked broccoli until it resembles spaghetti-like strands. Set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.
- Add the processed broccoli and cooked cherry tomatoes to the skillet, stirring to combine. Season with salt, black pepper, and red pepper flakes if using. Cook for an additional 2-3 minutes until heated through.
- Remove from heat and stir in the grated Parmesan cheese until melted and well combined.
- Serve warm, garnished with chopped fresh basil.
