Steps

  1. Bring a large pot of salted water to a boil. Add the broccoli florets and cook for 3-4 minutes until tender but still bright green. Remove the broccoli and set aside, reserving the water.
  2. In the same pot of boiling water, add the cherry tomatoes and cook for 2-3 minutes until softened. Drain and set aside.
  3. Using a food processor or a blender, pulse the cooked broccoli until it resembles spaghetti-like strands. Set aside.
  4. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.
  5. Add the processed broccoli and cooked cherry tomatoes to the skillet, stirring to combine. Season with salt, black pepper, and red pepper flakes if using. Cook for an additional 2-3 minutes until heated through.
