Ingredients

  • Spaghetti - 160 grams
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Onion - 1 medium, chopped
  • Canned diced tomatoes - 400 grams
  • Fresh basil - 10 grams, chopped
  • Salt - 1 teaspoon
  • Black pepper - to taste
  • Red pepper flakes - 1/4 teaspoon (optional)
  • Sugar - 1 teaspoon (to balance acidity)

Steps

  1. Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the spaghetti.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for 5 minutes until translucent.
  3. Add the minced garlic and cook for an additional 1-2 minutes until fragrant, being careful not to burn it.
  4. Stir in the canned diced tomatoes, salt, black pepper, red pepper flakes, and sugar. Bring to a simmer and let cook for about 10-15 minutes, stirring occasionally.
  5. Once the sauce has thickened, add the cooked spaghetti to the skillet. Toss to combine, adding reserved pasta water as needed to reach desired consistency.
  6. Remove from heat and stir in the chopped fresh basil. Serve warm, garnished with additional basil if desired.
