- Mixed mushrooms (e.g., cremini, shiitake, and oyster) - 200 grams, sliced
- Garlic - 3 cloves, minced
- Olive oil - 3 tablespoons
- Fresh parsley - 2 tablespoons, chopped
- Red chili flakes - 1/2 teaspoon
- Vegetable broth - 250 ml
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Cook the spaghetti according to the package instructions in salted boiling water until al dente. Drain and set aside, reserving a little pasta water.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the sliced mushrooms to the skillet and cook for 5-7 minutes until they are golden and tender, stirring occasionally.
- Pour in the vegetable broth and bring to a simmer. Add the red chili flakes, salt, and black pepper to taste. Let it simmer for another 3-4 minutes.
- Stir in the cooked spaghetti, lemon juice, and chopped parsley. Toss everything together until well combined. If the mixture is too dry, add a bit of the reserved pasta water.
- Serve immediately, garnished with additional parsley if desired.
