  • Mixed mushrooms (e.g., cremini, shiitake, and oyster) - 200 grams, sliced
  • Garlic - 3 cloves, minced
  • Olive oil - 3 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Red chili flakes - 1/2 teaspoon
  • Vegetable broth - 250 ml
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Cook the spaghetti according to the package instructions in salted boiling water until al dente. Drain and set aside, reserving a little pasta water.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the sliced mushrooms to the skillet and cook for 5-7 minutes until they are golden and tender, stirring occasionally.
  4. Pour in the vegetable broth and bring to a simmer. Add the red chili flakes, salt, and black pepper to taste. Let it simmer for another 3-4 minutes.
  5. Stir in the cooked spaghetti, lemon juice, and chopped parsley. Toss everything together until well combined. If the mixture is too dry, add a bit of the reserved pasta water.
  6. Serve immediately, garnished with additional parsley if desired.
