- Gluten-free spaghetti - 160 grams
- Red bell peppers - 2 medium (about 300 grams)
- Garlic - 2 cloves
- Olive oil - 3 tablespoons
- Onion - 1 small (about 100 grams)
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh basil - 2 tablespoons (chopped)
- Parmesan cheese - 30 grams (optional, for serving)
Steps
- Preheat the oven to 200°C (400°F).
- Cut the red bell peppers in half and remove the seeds. Place them cut-side down on a baking tray and roast in the oven for about 20 minutes, until the skins are blistered.
- While the peppers are roasting, cook the gluten-free spaghetti according to package instructions in a large pot of salted boiling water. Drain and set aside, reserving a little pasta water.
- In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent (about 5 minutes).
- Remove the roasted peppers from the oven and let them cool slightly. Peel the skins off and chop the peppers.
- Add the chopped roasted peppers to the skillet with the onion and garlic. Stir in salt and black pepper, and cook for another 2-3 minutes.
- Transfer the pepper mixture to a blender and blend until smooth. If the sauce is too thick, add a little reserved pasta water to reach the desired consistency.
- Return the blended sauce to the skillet, add the cooked spaghetti, and toss to combine. Drizzle with the remaining olive oil and add fresh basil, stirring gently.
- Serve immediately, topped with grated Parmesan cheese if desired.
