Ingredients

  • Gluten-free spaghetti - 160 grams
  • Red bell peppers - 2 medium (about 300 grams)
  • Garlic - 2 cloves
  • Olive oil - 3 tablespoons
  • Onion - 1 small (about 100 grams)
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh basil - 2 tablespoons (chopped)
  • Parmesan cheese - 30 grams (optional, for serving)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Cut the red bell peppers in half and remove the seeds. Place them cut-side down on a baking tray and roast in the oven for about 20 minutes, until the skins are blistered.
  3. While the peppers are roasting, cook the gluten-free spaghetti according to package instructions in a large pot of salted boiling water. Drain and set aside, reserving a little pasta water.
  4. In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent (about 5 minutes).
  5. Remove the roasted peppers from the oven and let them cool slightly. Peel the skins off and chop the peppers.
  6. Add the chopped roasted peppers to the skillet with the onion and garlic. Stir in salt and black pepper, and cook for another 2-3 minutes.
  7. Transfer the pepper mixture to a blender and blend until smooth. If the sauce is too thick, add a little reserved pasta water to reach the desired consistency.
  8. Return the blended sauce to the skillet, add the cooked spaghetti, and toss to combine. Drizzle with the remaining olive oil and add fresh basil, stirring gently.
  9. Serve immediately, topped with grated Parmesan cheese if desired.
